1 pound ground beef
1 teaspoon cumin
1 tablespoon garlic
1 medium white onion (chopped fine)
1/2 cup raisins
1/2 cup sofrito
2 small potatoes (peeled and diced)
8 to 10 green olives chopped (pitted)
1/3 cup capers
salt and pepper to taste
olive oil for sautéing
1. In a frying pan, heat the olive oil. Sauté the onions, add beef and potatoes
2. Add the rest of the ingredients and cook another 15 minutes, or until the potatoes are done.
3. Cook until the liquid is fully evaporated, but the meat is still moist.
4. Use pre-made empanada dough. Just fill, close and fry.
